Chocolate Coconut Non-sweet Chia Pudding

~serves 2; Paleo, Whole30; vegan; dairy & gluten- free

- ¾ cup + 2 TBSPs canned coconut milk (full fat coconut milk will result in a richer, creamier pudding)

- 2 TBSPs shredded, unsweetened coconut

- 3 TBSPs chia seeds

- 1 TBSP unsweetened 100% cocoa powder

- 1 teaspoon pure vanilla extract

*if you are not concerned about added sugars, I recommend adding 2 teaspoons of honey to the recipe


    Mix the coconut milk, vanilla, and cocoa powder together in a small jar. Add the coconut and chia seeds and stir thoroughly or cap the jar and shake well. Refrigerate the pudding for at least 4 hours or overnight. Enjoy with additional coconut or hemp seeds sprinkled on top!
