Harvester Energy Bites

~makes 15 small-medium balls, Paleo & gluten free

- 20 small pitted dates

- ½ cup almonds or pecans

- ¼ cup unsalted sunflower seeds

- ¼ cup ground flaxseed

- 3 TBSP hulled hemp seed

- ½ cup dried unsweetened cranberries

- ¼ cup shelled pumpkin seeds (pepitas)

- ⅛ teaspoon nutmeg

- ⅛ teaspoon cloves

- 1 teaspoon cinnamon

- 2 TBSP honey

- 1 TBSP pure maple syrup


     First pulse all nuts in your food processor on high until reduced in size by half. Then add dates. Pulse on high until sticky, then add sunflower seeds, hemp seed, cranberries, flaxseed, pepitas, honey, maple syrup, and spices. Continue to pulse until completely mixed and a ball starts to form. Add additional mix-ins at this time and pulse for 30 seconds. Press mixture into small balls in your hands and place on cookie sheet that has wax paper. Freeze for 1 hour so shape holds. I keep these in the freezer, but they will be fine in the refrigerator too. They won't last long enough to go bad!
