4 INGREDIENT No-bake SNOWBALL COOKIES

~ makes 14-16 small cookies; Paleo, gluten-free, and dairy-free

- 3 cups unsweetened coconut flakes

- ¼ cup almond flour

- ¼ cup + 1 ½ TBSP honey

- ¼ cup + 2 TBSPs coconut oil, melted

     Measure the coconut flakes and almond flour into a food processor. Pulse for 10 seconds. Next add the honey and melted coconut oil and pulse until the ingredients are fully combined. Using a small cookie scoop, form balls and roll into a tight ball using your hands. Place the cookies onto a baking sheet and place them in the freezer for 20-30 minutes to set the cookies. Store in an airtight container on the counter or in the refrigerator for up to two weeks.
