Healthier Monster Cookies

~makes 12-15 large cookies

Ingredients:

  • 1 1/2 cup rolled oats

  • 1/2 cup blanched almond flour

  • 1/3 cup coconut sugar (may substitute brown sugar)

  • 1 teaspoon baking soda

  • 1 large egg

  • 1/3 cup natural smooth peanut butter

  • 1/3 cup room temperature ghee or butter

  • 1/4 cup maple syrup

  • 1/3 cup dark chocolate chips

  • 1/3 cup chocolate candies (I use Unreal brand)

Instructions:

  1. Preheat the oven to 350 degrees, and line a large baking sheet with parchment paper.

  2. Add the dry ingredients to a stand mixer and mix to sift everything together.

  3. Add the wet ingredients plus coconut sugar to the dry and mix until uniform.

  4. Add the chocolate chips and chocolate candies and mix in by hand.

  5. Scoop the cookies onto the baking sheet and slightly flatten with the back of the scoop or your fingers.

  6. Bake for 12-13 minutes or until the bottoms are firm.

  7. Cool on the pan for 10 minutes prior to eating.
