Healthy Pumpkin Muffins

~ makes 12 muffins

Ingredients

• 3 large eggs, room temperature

• ½ cup melted coconut oil or avocado oil

• 1 cup pure pumpkin puree

• ½ cup pure maple syrup

• 2 teaspoons cinnamon

• ½ teaspoon sea salt

• ½ teaspoon ground nutmeg

• ½ teaspoon ground cloves

• ¼ teaspoon ground ginger

• 2 cups oat flour (I just blend up organic, GF oats in my blender and then measure out the flour)

• ¾ cup almond flour

• ½ teaspoon baking soda

• 1 teaspoon baking powder

• optional: ½ cup dark chocolate chips

Instructions

1) Preheat the oven to 350 degrees F. and prepare a muffin tin with liners.

2) Beat the first five ingredients together in a mixing bow or stand mixer.

3) Add the spices, flours, and baking soda/powder (and chocolate chips if you wish). Mix everything together well.

4) Using a large cookie scoop fill each muffin well.

5) Bake for 20-22 minutes or until a toothpick comes out clean. Cool on a baking rack prior to storing in a container.
