Protein Packed Energy Bites

~18 servings, Paleo & gluten free

- 30 small dates (pitted)

- 1 cup raw walnuts

- ½ cup raw almonds

- ½ unsweetened coconut flakes

- ¼ cup ground flaxseed

- 3 TBSP hulled hemp seed

- ⅛ cup honey

     First pulse all nuts in your food processor on high until reduced in size by half. Then add dates. Pulse on high until sticky, then add hemp seed, flaxseed, coconut flakes, and honey. Continue to pulse until completely mixed and a ball starts to form.

     Press mixture into small balls in your hands and place on cookie sheet lined with wax paper (a cookies scoop works great to help form even balls). Freeze for 1 hour so shape holds. I keep these in the freezer, but they will be fine in the refrigerator too! They won't last long enough to go bad!
