Apple  Cinnamon Baked Oatmeal

~ serves 6 adults; gluten-free and dairy-free option

Ingredients 

  • 2 large eggs

  • 1 ½ cup milk of choice (I use unsweetened vanilla almond milk)

  • 1 cup unsweetened applesauce

  • ¼ cup pure maple syrup

  • 2 teaspoons vanilla

  • 2 ½ cups rolled oats

  • ½ cup milled flaxseed

  • 1 tablespoon cinnamon

  • 2 teaspoon baking powder

  • ½ teaspoon salt

  • 1 medium-large apple, diced into small cubes

  • ½ cup raisins or chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350 and spray a 2 quart casserole dish or 8 x 8 inch pan with nonstick spray.

  2. Whisk all wet ingredients together.

  3. Stir in the dry ingredients, including the apples and raisins/walnuts.

  4. Spread the oat batter in the prepared pan and bake for 30-35 minutes or until the center no longer jiggles.

  5. Serve with milk, yogurt, warm syrup, or peanut butter.
