~ serves 1, vegan; gluten & dairy-free

- ½ cup old fashioned oats, gluten free if desired

- ⅓ cup fresh or frozen blueberries

- ½ cup unsweetened coconut or almond milk

- ½ teaspoon vanilla

- 2 TBSPs milled flaxseed

- ½ banana

- 1 teaspoon ground cinnamon

- Optional: top with 1 TBSP hemp seeds (not included in nutritional information)

*if you want to make the oatmeal sweeter, drizzle 1-2 teaspoons of honey over top

     Mix the oats, blueberries, milled flaxseed, milk, and vanilla together in a large cereal bowl. Place the bowl in the microwave for 1 ½ minutes. Stir the oats and then add the cinnamon and ¼ the banana and stir all together again. Cook for one additional minute. Top with the remainder of the banana and enjoy!
