Salmon Burgers

~ paleo, dairy-free, and gluten-free

~ serves 2-4; makes 4 burgers

*I love these burgers for an easy dinner! They are super quick to make and I love the amount of omega-3s I’m gaining! Plus, 6 of the 9 ingredients I buy from Costco and normally have on hand.

- 1 large egg, whisked

- 1 TBSP lemon juice

- 2 cans wild caught Kirkland salmon (or 12 oz canned salmon), drained

- 3 TBSPs almond flour

- ½ teaspoon dried dill weed

- 1 teaspoon dried parsley

- ½ teaspoon garlic powder

- 2 TBSPs finely diced shallots, red onion, or green onions

- avocado oil spray

      In a medium bowl, whisk the egg. Drain the salmon, then add to the bowl, flaking as you take it out of the can. Add the remaining ingredients to the bowl (except for the spray) and mix everything together well. 

      Using your hands, form the mixture into 4 patties. Heat a large non-stick skillet over medium-high heat. Grease with avocado oil spray. Place the burgers into the pan and cook for 5 minutes. Carefully flip each burger using a large spatula and cook for an additional 4-5 minutes or until both sides are golden and brown. Serve with homemade tartar sauce, mustard, ketchup, or your favorite aioli sauce!
